Palladian Cabernet Sauvignon 2016
100% Cabernet Sauvignon grapes entirely in French Oak barrels from the very beginning with destemming the chilled grapes straight into the new French Oak barrels and fermenting, rolling and plunging then maturing the wine in the same barrels. The wine has definitely taken on an extra dimension and lifted a level with texture and oak integration making the wine more seamless on the palate.
Reviews and Awards
A case of achieving more by doing less if ever there was one. The bouquet is fragrant, full of blackcurrant and bramble spice. Oak and tannins are both there, but neither able to be separately analysed. Only medium-bodied, itself a rare example in top class cabernet.

Dried red berries, plums, herbs and blackcurrants. Quite hearty but complex on the full-bodied palate, where vibrant layers of soft red fruit intermingle with spicy acidity. Very fruity on the finish, but this also shows concentration and serious depth. Drink in 2021.

Deepish red colour with purple tints and a strongly oaky bouquet. Dark chocolate and mocha. It's full-bodied and rich with density, flesh and grip. Violets and blue fruits as well. There is soft but pervasive tannin balanced by concentrated sweet fruit and fleshy texture. A very attractive wine with a future.
