Ice Pressed Chardonnay 2021
Its rich and unctuous and intense with a syrup like texture of concentration and power. Candied orange, Cumquat marmalade, Ginger Snap biscuits and spicey Cinnamon Oak to close.
A wine that can either be enjoyed as an aperitif or as a dessert style.
"This ice-wine was made by freezing the juice to remove some water, then fermenting the concentrated juice. The colour is youthfully pale and bright, the bouquet revealing discreet honey aromas with nutty barrel-ferment hints, while the palate is tremendously intense and bright, with elevated acidity and great tension. The sweetness level is moderate compared to most botrytis wines, balanced by lively acidity and intense fruit. A ripping young wine that can only improve with more time."

"Hand picked on Valentine's Day, chilled down to -16C, whole-bunch pressed. Fermented in 2 seasoned French barriques and one stainless-steel vat. Matured for 4 months. 121.9g/L. Very sweet, very intense, extremely pure. It's not exactly like drinking sweet Margaret River Chardonnay, it's something else entirely. Crystalline doesn't precisely sum it up, but it's on the right track. A bit like peach concentrate, peach nectar. The warm year has contributed fruit power and density. 375ml."
