62% Semillon 38% Sauvignon Blanc
The philosophy behind the Fraser Gallop Estate style of Semillon Sauvignon Blanc is to make the best possible blend by combining the strengths of these two varieties with the regionality of the sub-regions within the Margaret River region.
The Semillon and Sauvignon Blanc grapes were all harvested in the cool hours of night or early morning and delivered promptly to the crush pad. The Semillon and Sauvignon Blanc grapes were destemmed and crushed and gently pumped in our Bucher XPF 80 press. With the automatic Ortal computerised pressing programme the quality of pressing was superb with minimal rotations of the press.
The juices were settled at 8ºC. Three days later the clear juice was racked off gross lees and warmed to 16º C for fermentation. A small proportion of the Semillon was fermented in new Bordeaux French oak barriques which helps improve the structure and length of flavour in the wine.

The trademark aromas of cumquat and Tahitian lime, lemongrass and nettles are there infused with the subtle toast and vanilla, smoke and spice lift from the barrel fermentation portion of the blend.
The palate is dry, low in alcohol weight yet fruity and has a zesty natural acidity that stands it in good stead as a food wine. The mouth feel and the texture of the wine lingers due to the subtle oak presence and intensity of the fruit flavours. Notes of lime, grapefruit and lemongrass continue on to the palate. A well balanced wine with lingering flavours and a nice complexity that keeps you coming back for more.
